  • 2 Tbsp. coconut oil
  • 1 lb. chicken livers (cut into 1 inch pieces)
  • 1 large¬†white onion (thinly sliced)
  • 1 inch piece of fresh ginger (grated)
  • 2 cloves garlic (crushed)
  • 2 medium¬†red chillies (thinly sliced)
  • 1 red bell pepper (sliced into strips)
  • 1 green bell pepper (sliced into strips)
  • 4 oz. snow peas
  • 1 cup fresh beansprouts
  • 3 Tbsp. coconut aminos
  • 1 Tbsp. water
  • 2 spring onions
  1. Heat the coconut oil over a medium heat and stir fry the liver until fully browned.
  2. Remove the liver from the pan and add in the onions. Cook over a medium heat for 2-3 minutes until softened slightly.
  3. Add the garlic, ginger and chillies and cook for a further 2 minutes.
  4. Add the peppers and snow peas and cook until just softened.
  5. Add the bean sprouts and cook, stirring constantly for a further minute.
  6. Finally add the liver, coconut aminos and water. Cook on a high heat for 2-3 minutes.
  7. Serve topped with thinly sliced spring onions and chillies if desired.
