Ingredients
FOR THE SALAD
  • 1 cup rocket leaves
  • 1 cup spinach leaves
  • ½ cup blueberries
  • ½ cup hazelnuts
  • 1 green apple (cut into slices)
  • 1 large white onion
  • 1 Tbsp. olive oil
  • ¾ lb. chicken livers (chopped into 1 inch pieces)
FOR THE DRESSING
  • ¼ cup Lemon juice
  • 2 Tbsp. honey
  • 2 Tbsp. fresh thyme (chopped)
  • 1 clove garlic (crushed)
  • ¼ cup olive oil
  • Salt and pepper to taste
Instructions
  1. Toss the salad ingredients together in a large bowl (apart from the livers).
  2. Heat 1 Tbsp. coconut in a medium skillet over a medium heat.
  3. Cook the chicken livers over a medium heat, stirring often until golden brown.
  4. In the mean time mix all of the dressing ingredients together and whisk well.
  5. Toss the chicken liver with the salad and pour over the dressing to taste.
