When most people think of chicken liver, it’s the chicken liver pate that comes straight to mind. But the truth is that there are lots of utterly delicious ways to cook chicken liver. This tasty stir fry is a great example. Full of healthy veggies and spices, its super-easy to prepare and packs a really powerful nutritional punch.
Liver is one of the foods that you should be introducing to your diet if you are serious about recovering from adrenal fatigue. Sometimes known as nature’s multivitamin, it contains many of the micronutrients that your body needs to repair itself and get your energy levels back to normal.
- 2 Tbsp. coconut oil
- 1 lb. chicken livers (cut into 1 inch pieces)
- 1 large white onion (thinly sliced)
- 1 inch piece of fresh ginger (grated)
- 2 cloves garlic (crushed)
- 2 medium red chillies (thinly sliced)
- 1 red bell pepper (sliced into strips)
- 1 green bell pepper (sliced into strips)
- 4 oz. snow peas
- 1 cup fresh beansprouts
- 3 Tbsp. coconut aminos
- 1 Tbsp. water
- 2 spring onions

Heat the coconut oil over a medium heat and stir fry the liver until fully browned.

Remove the liver from the pan and add in the onions. Cook over a medium heat for 2-3 minutes until softened slightly.

Add the garlic, ginger and chillies and cook for a further 2 minutes.

Add the peppers and snow peas and cook until just softened.

Add the bean sprouts and cook, stirring constantly for a further minute.

Finally add the liver, coconut aminos and water. Cook on a high heat for 2-3 minutes.

Serve topped with thinly sliced spring onions and chillies if desired.
