Skewers are a really easy way to get a healthy dose of protein and vegetables. These chicken liver skewers combine red and green peppers with green apple.
Make sure not to overcook the skewers, or the chicken liver will get too dry. Likewise, the peppers and green apple tend to be better when they are slightly crunchy and not overcooked.
Here’s a useful tip for using wooden skewers. Soak them in water for at least 10 minutes before using them, then they will be much less likely to get charred and burnt on the grill. Alternatively, you can buy some reusable stainless steel skewers.
- ¾ lb. chicken livers (chopped into 1-1.5 inch pieces)
- 1 red pepper
- 1 green pepper
- 1 green apple
- 1 red pepper
- 6-8 wooden skewers
- Smoked paprika
- Salt and pepper

Chop the vegetables/fruit and livers into similar sized chunks.

Place the pieces on the skewers, alternating the ingredients.

Brush with a little olive oil.

Season with salt, pepper and smoked paprika to taste.

Grill for approximately 10 minutes turning frequently until the liver is cooked.

Serve on green leaves.
